Following the season's ingredients and harvesting nature's bounty is what makes Hashima special.

Hashima's approach to using seasonal ingredients is what we value above all else. We consider the overall balance of the dish and breathe life into the colors of the four seasons: For example adding the aroma of charcoal into sweet fish (Ayu), or flavoring the fatty autumn conger eel (Hamo) with the sourness of green yuzu citron. Our Tuna flower broth complements the main ingredients, giving the dish a seasonal aroma and a nourishing taste.
